Valentine's Day is here which means candy, chocolate, and love- all of my favorite things!
Our Valentine's Dessert- Mississippi Mud Cake
I got this recipe from the cooks at Fun Valley RV park. Chad and I worked there 1 summer and this was my favorite dessert. I love it!
-Melt 2 sticks butter and 1/3 C cocoa together
-Pour into bowl of 4 eggs, 1 1/2 C flour, 2 C sugar, and a pinch of salt
-Mix and add 1 1/2 C pecans (which I do not because I feel nuts ruin the goodness of chocolate)
-Bake in greased and flour oblong pan for 30 min at 350
-Place min. marshmallows at full coverage over the hot cake
-Return to oven for around 5 min until marshmallows are toasted
Let cool then drizzle chocolate syrup over top (You can use Hershey's syrup but it doesn't taste as good as the homemade syrup. I did use Hershey's this time because I didn't want to make the syrup.)
Syrup
Melt 1/2 stick butter and 1/3 C cocoa, add 1 tsp vanilla, 1 lb powdered sugar and 1/2 C milk. Drizzle over cool cake!

Chad and I did cheat and opened our gifts early, a couple of weeks early. :) What can I say? I am really bad at keeping secrets and was practically busting at the seams to open my gifts and tell Chad about his!
He gave me new shoes, a strainer, apple peeler, and juicer.

To make gift giving easier, we have started a list on the frig of all the things we want, no matter the price. It's so easy now because we just look at the list to decided what to get each other that's in the correct price range. No long conversations of "What do you want?" "I don't know. I can't think of anything right now." and so on.
Chad's gifts!
I gave him Stars coasters for his office, his favorite tea (It's taste very similar to the tea we had in Africa- it can be found at Target), iTunes gift card, and candy (some of which I have eaten-opps).
Another part of my gift is Chad is going to become Chef Pacanowski and make homemade pizza for dinner on Valentine's Day. Yeah! I love not having to cook. Plus, I love watching Chad cook. There is just something about men cooking. Once, Chad had to call his Granddad to ask what a beaten egg was! haha!
